Elegant aromas of Granny Smith apple and refreshing pink grapefruit are complimented by hints of fresh biscuit and caramelized stone fruit. This medium bodied, traditional French style brut highlights our single vineyard estate grown Pinot Noir and Chardonnay.
This medium-bodied fizz dances on the palate, reflective of this single vineyard estate blend's large proportion of chardonnay (82/18 chardonnay/pinot noir). Whole cluster pressed, cool fermented prior to 27 months on the lees, the 7.6 g/l RS just edges out the racy acidity for a harmonious finish, lingering with aged parmesan. Striking, well made, well done." - Anthony Gismondi
