An explosion of fruit, cherry, fresh plum and cranberry notes are highlighted by a subtle herbaceous undertone. 16 Months spent in French Oak barrel enhances notes of vanilla and cocoa on the palate. This bold Pinot Noir is rich with structure and tannin. It will age gracefully for 5-7 years.
“The One” is a 2011 vintage sparkling, made in the classic French style from Pinot Noir and Chardonnay grapes. It exhibits classic bready, brioche aromas complemented by a hint of minerality and clean, refreshing citrus flavours on the palate.

Elegant aromas of Granny Smith apple and refreshing pink grapefruit are complimented by hints of fresh biscuit and caramelized stone fruit. This medium bodied, traditional French style brut highlights our single vineyard estate grown Pinot Noir and Chardonnay.
This medium-bodied fizz dances on the palate, reflective of this single vineyard estate blend's large proportion of chardonnay (82/18 chardonnay/pinot noir). Whole cluster pressed, cool fermented prior to 27 months on the lees, the 7.6 g/l RS just edges out the racy acidity for a harmonious finish, lingering with aged parmesan.
