Noble Ridge is an estate vineyard and winery located in the Okanagan Valley. All work is done by hand on site by a team of dedicated workers who strive to create exceptional wine that reflects its noble namesake.
A Merlot and Cabernet Sauvignon blend, trellised to ensure full ripening and thus the full berry flavours of blueberry, dark cherries and blackberries. Those flavours are complimented with spice accents, leather, tobacco and chocolateflavours. The aromas of cherries and licorice are rich and complex. Round, full-bodied mouth feel is complimented by soft yet firm tannins, Built to age in your cellar for another 5-10 years.
Grilled Rib-Eye Steak marinated with dry mustard, red wine, Demerara, and Montreal steak spice
Beef Bourguignon with foraged mushrooms, served with on a bed of egg noodles
Venison tenderloin with slivers of garlic and olive oil, grilled red peppers
Aged Applewood Cheddar with toasted nuts and artisan breads
Dark Chocolate Mousse with hazelnuts
De-stemmed and crushed
Fermentation kept between 20 °C and 25 °C
15 months in French & American barrels
75% French, 25% American; 40% new oak
Bottle aged for 14 months
All fractions kept separate until bottling, then blended
